Cheesy Beef Rotel Dip

Ingredients

  • The Protein: 1 lb ground beef.
  • The Cheese: 1 lb Velveeta or your favorite processed melting cheese (cubed).
  • The Kick: 1 can (10 oz) Ro*Tel (diced tomatoes and green chilies, undrained).
  • The Seasoning: 1/2 tsp garlic powder and 1/2 tsp onion powder.
  • Garnish: Fresh chopped parsley or cilantro.
  • For Serving: A big bowl of tortilla chips.

Instructions

  1. Brown the Beef: In a large skillet or saucepan over medium-high heat, cook the ground beef until it is completely browned. Drain the excess grease thoroughly.
  2. Combine: Turn the heat down to low. Add the cubed cheese and the entire can of Ro*Tel (including the juice) to the skillet with the beef.
  3. Melt: Stir the mixture constantly until the cheese is completely melted and the dip is smooth and creamy.
  4. Season: Stir in the garlic powder and onion powder to round out the savory flavors.
  5. Serve: Transfer the dip to a warm serving bowl or a small slow cooker to keep it dippable. Garnish with a sprinkle of fresh herbs.
  6. Enjoy: Serve immediately with plenty of sturdy tortilla chips for scooping.
