Cracker Barrel Meatloaf

Ingredients

  • The Meat: 1.5 lbs ground beef (80/20 blend for best flavor).
  • The Bind:
    • 2.5 cups Ritz crackers, crushed (this is the secret to the texture).
    • 2 large eggs, beaten.
    • 1/2 cup whole milk.
  • The Mix-ins:
    • 1/2 cup finely diced green bell pepper.
    • 1/2 cup finely diced onion.
    • 4 oz shredded sharp Cheddar cheese.
  • The Glaze:
    • 1/2 cup ketchup.
    • 2 tbsp brown sugar.
    • 1 tsp yellow mustard.

Instructions

  1. Prep: In a large bowl, whisk together the eggs, milk, and crushed crackers. Let the mixture sit for 5 minutes so the crackers can absorb the liquid.
  2. Combine: Add the ground beef, diced bell peppers, onions, and shredded cheese to the cracker mixture. Use your hands to gently mix until just combined—do not overwork the meat, or it will become tough.
  3. Shape: Form the mixture into a loaf shape and place it into a greased 9×5 inch loaf pan or an 8×8 inch baking dish.
  4. Glaze: In a small bowl, stir together the ketchup, brown sugar, and mustard. Spread half of the glaze evenly over the top of the meatloaf.
  5. Bake: Bake at 350°F for 30 minutes. Remove from the oven, spread the remaining glaze over the top, and bake for another 15–25 minutes until the internal temperature reaches 160°F.
  6. Rest: Allow the meatloaf to rest for at least 10 minutes before slicing to ensure it holds its shape.
