Ingredients
- The Beef:
- 1 lb flank steak or sirloin, cut into very small strips.
- 1 tbsp soy sauce and 1 tsp honey for a savory glaze.
- 1/2 tsp garlic powder.
- The Veggies: 2 bell peppers (red and green), finely julienned.
- The Cones:
- 4 large flour tortillas (cut in half to create semi-circles).
- 2 tbsp melted butter.
- The Glue: A small amount of flour and water mixed into a thick paste to seal the cones.
- Garnish: Freshly chopped chives or sesame seeds.
Instructions
- Form Cones: Take a tortilla half and roll it into a cone shape. Use the flour paste to seal the edge tightly. Place a crumpled ball of foil inside each cone to help it hold its shape while baking.
- Crisp: Brush the outside of the cones with melted butter. Bake at 375°F for 8–10 minutes until golden and stiff. Remove the foil inserts.
- Sizzle the Beef: In a hot skillet, sear the beef strips with garlic powder, salt, and pepper for 3 minutes until browned.
- Sauté Peppers: Add the julienned peppers to the beef and cook for another 3 minutes until tender but still colorful. Stir in the soy sauce and honey glaze at the last second.
- Assemble: Carefully stuff the crispy tortilla cones with the beef and pepper mixture.
- Finish: Garnish with fresh chives and serve immediately while the cones are still crunchy.
