- The Cajun Crab Filling:
- 1/2 lb lump crab meat, drained and picked over.
- 1/2 cup shredded Mozzarella or Gruyère (for a perfect cheese pull).
- 1 tbsp Cajun seasoning.
- 2 tbsp softened cream cheese (to bind the filling).
- Fresh parsley, finely chopped.
- The Roasted Garlic Butter:
- 4 tbsp salted butter, melted.
- 2 cloves roasted garlic, mashed (or 1/2 tsp garlic powder).
- 1 tsp fresh parsley, chopped.
Instructions
- Prep: Preheat your oven to 425°F. Line a baking sheet with parchment paper.
- Mix Biscuit Dough: In a large bowl, whisk together the flour, baking powder, and garlic powder. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the shredded cheddar cheese.
- Hydrate: Gently fold in the buttermilk until a soft dough forms. Do not overmix, or the biscuits will be tough.
- Prepare Filling: In a separate small bowl, gently combine the lump crab meat, mozzarella, Cajun seasoning, cream cheese, and parsley.
- Assemble: Scoop about 1/4 cup of dough and flatten it in your hand. Place a spoonful of the crab mixture in the center, then fold the dough over and seal it to form a ball.
- Bake: Place the biscuits on the prepared baking sheet. Bake for 12–15 minutes or until the tops are golden brown and the cheese inside is molten.
- Garlic Butter Finish: While the biscuits bake, whisk together the melted butter, roasted garlic, and parsley.
- Brush & Serve: Immediately after removing from the oven, brush the warm biscuits generously with the garlic butter. Serve warm for the best experience.
