Instructions
Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C). Generously grease a 9×13-inch baking dish with butter or non-stick cooking spray.
Step 2: Prepare the Berry Layer
In a large mixing bowl, combine the fresh blackberries, cornstarch, and ½ cup of granulated sugar. Toss gently until the berries are evenly coated. Drizzle the ¼ cup of melted butter over the fruit mixture and stir briefly to combine. Transfer the berries into the bottom of the greased baking dish, spreading them into an even layer.
Step 3: Mix the Cobbler Topping
In a separate bowl, whisk together the all-purpose flour, ½ cup of granulated sugar, baking powder, and salt. Pour in the milk, vanilla extract, and ¼ cup of melted butter. Whisk the mixture until the batter is smooth and fully combined.
Step 4: Assemble the Cobbler
Pour or spread the batter evenly over the blackberry layer in the baking dish, covering the fruit completely.
Step 5: Bake to Perfection
Place the dish in the preheated oven and bake for 1 hour, or until the fruit is thick and bubbling furiously around the edges and the top cake crust is beautifully cooked through and deeply golden brown. Allow the cobbler to cool and set for 10 to 15 minutes before serving warm.
