Ingredients
For the Peach Filling:
- 6 cups fresh Georgia peaches, peeled and sliced (or frozen thawed peaches)
- ½ cup granulated sugar
- ¼ cup brown sugar, packed
- 1 tbsp fresh lemon juice
- 1 tbsp cornstarch
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
For the Cobbler Crust Topping:
- 2 cups all-purpose flour
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 2 tsp baking powder
- ½ tsp salt
- ½ cup (1 stick) cold unsalted butter, cubed
- ⅓ cup boiling water
For the Crunchy Topping:
- 1 tbsp granulated sugar
- ¼ tsp ground cinnamon
Instructions
Step 1: Prep and Preheat
Preheat your oven to 425°F (220°C). Lightly grease a 9×13-inch baking dish with butter or non-stick cooking spray.
Step 2: Cook the Peach Filling
In a large saucepan, combine the sliced peaches, granulated sugar, brown sugar, lemon juice, cornstarch, cinnamon, and nutmeg. Cook over medium heat for about 3 to 5 minutes, stirring gently, until the sugar dissolves and the peaches begin to release their juices. Remove from heat and pour the mixture into the bottom of your prepared baking dish.
Step 3: Mix the Topping
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt. Add the cold cubed butter. Use a pastry cutter or your fingertips to rub the butter into the flour mixture until it resembles coarse crumbs.
Step 4: Add the Hot Water
Pour the boiling water directly into the flour and butter mixture. Stir gently with a fork just until a soft, thick dough forms. Do not overmix.
Step 5: Assemble the Cobbler
Drop spoonfuls of the soft dough evenly over the top of the hot peach filling, leaving a few small gaps for the steam to escape and juices to bubble through. In a small bowl, mix the remaining tablespoon of sugar and cinnamon together, then sprinkle it generously over the dough.
Step 6: Bake Until Golden
Bake for 25 to 30 minutes, or until the peach filling is thick and bubbling around the edges, and the topping is cooked through, crisp, and beautifully golden brown. Let the cobbler cool for 10 minutes before serving warm with vanilla ice cream.
