Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper or foil.
Combine the base: In a large bowl, combine the ground beef, dry stuffing mix, water, and eggs. Mix gently with your hands just until everything is thoroughly incorporated (do not overmix).
Form the loaves: Shape the meat mixture into individual mini loaves or one large loaf and place them onto the prepared sheet pan.
Add the topping: Spread the ketchup or barbecue sauce evenly over the top of each loaf.
Bake: Bake for 35 to 45 minutes (depending on the size of your loaves), or until the meatloaf is cooked through and reaches an internal temperature of 74°C (165°F).
Rest and serve: Let the meatloaf rest for 5 to 10 minutes before slicing and serving warm.
