For the Lemon Glaze
1 cup powdered sugar
2 to 3 tbsp fresh lemon juice
Instructions
Preheat your oven to 175°C (350°F) and grease a 9×5-inch loaf pan or line it with parchment paper.
Whisk dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
Mix wet ingredients: In a large bowl, whisk together the granulated sugar and softened butter until smooth. Add the eggs one at a time, beating well after each addition, then stir in the lemon zest, lemon juice, and vanilla extract.
Combine: Gradually alternate adding the dry ingredients and the milk to the wet mixture, stirring gently just until combined and smooth.
Bake: Pour the batter evenly into the prepared loaf pan. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
Make the glaze: While the loaf cools slightly, whisk together the powdered sugar and fresh lemon juice in a small bowl until smooth and pourable.
Glaze and serve: Drizzle the lemon glaze generously over the warm loaf, letting it drip down the sides. Slice and serve.
