Prep the ribs: Remove the thin membrane from the back bone side of the ribs if not already removed. Rub the ribs lightly with olive oil.
Season: In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture evenly all over the ribs.
Wrap and bake: Place the ribs meat-side up on a large sheet of heavy-duty aluminum foil and wrap them tightly to create a sealed packet. Place the foil packet on a baking sheet and bake in the oven for 2.5 to 3 hours, or until the meat is tender and pulling away from the bones.
Add BBQ sauce: Remove the ribs from the oven, carefully open the foil, and brush a generous layer of barbecue sauce all over the top of the ribs.
Caramelize: Turn the oven to broil (or increase the temperature to 230°C / 450°F). Leave the ribs uncovered in the foil and broil for 3 to 5 minutes, watching closely until the BBQ sauce is bubbling, sticky, and slightly charred.
Serve: Let rest for 10 minutes before slicing between the bones and serving warm.
