Sugar-Free Blueberry Cream Cheese French Toast Casserole

A cozy sugar-free blueberry cream cheese French toast casserole with a creamy filling, juicy berries, and a soft baked bread base—perfect for brunch or make-ahead mornings.

Ingredients

Casserole base

8 cups day-old bread cubes, preferably brioche-style or French bread

8 oz cream cheese, softened

2 cups fresh or frozen blueberries

6 large eggs

2 cups unsweetened almond milk or milk of choice

1/3 cup granulated sugar-free sweetener

2 tsp vanilla extract

1 tsp cinnamon

1/4 tsp salt

Optional streusel topping

1/2 cup almond flour

3 tbsp butter, melted

2 tbsp granulated sugar-free sweetener

1/2 tsp cinnamon

Optional serving

Sugar-free maple syrup

Extra blueberries

Light dusting of powdered sugar-free sweetener

Steps to Create

Prepare the casserole

Grease a 9×13-inch baking dish.

Spread half of the bread cubes in an even layer in the dish.

Cut the cream cheese into small cubes and scatter over the bread.

Sprinkle half of the blueberries over the top, then add the remaining bread cubes and blueberries.

Make the custard

In a large bowl, whisk together the eggs, almond milk, sweetener, vanilla, cinnamon, and salt until well combined.

Pour the mixture evenly over the bread, pressing down gently so the bread begins to absorb the liquid.

Cover and refrigerate for at least 4 hours or overnight for the best texture.

Add the topping

If using, mix the almond flour, melted butter, sweetener, and cinnamon until crumbly.

Sprinkle the streusel over the casserole before baking.

Bake

Preheat the oven to 350°F.

Bake covered for 30 minutes.

Uncover and bake for another 20 to 25 minutes, or until the center is set and the top is golden.

Serve

Let the casserole rest for 10 minutes before serving.

Serve warm with extra blueberries or sugar-free maple syrup.

Tips & Tricks

Use day-old bread so it soaks up the custard without getting too soggy.

If using frozen blueberries, do not thaw them first.

Chill overnight for the richest flavor and best texture.

Cut the cream cheese into small cubes so it melts into creamy pockets.

A streusel topping adds a bakery-style finish without much extra work.
