Ingredients
- The Meat: 2 lbs ground beef (80/20 blend works best for moisture).
- The Binder & Flavor: 1 cup herb-seasoned stuffing mix or crushed Ritz crackers.
- The Liquid: 2 large eggs, beaten.
- The Moisture: 1/2 cup whole milk or beef broth.
- The Glaze: 1/2 cup ketchup (plus extra for topping).
- Seasoning (Freebie): Salt and black pepper to taste.
Instructions
- Mix: In a large bowl, combine the ground beef, stuffing mix, eggs, milk, and 1/4 cup of the ketchup. Season with salt and pepper.
- Form: Mix with your hands until just combined—overworking the meat can make it tough. Shape the mixture into a rectangular loaf on a parchment-lined sheet pan.
- Bake: Place in a preheated oven at 375°F for 40 minutes.
- Glaze: Remove from the oven and spread the remaining ketchup generously over the top of the loaf.
- Finish: Return to the oven for another 10–15 minutes until the internal temperature reaches 160°F and the glaze is tacky and slightly caramelized.
- Rest: Let the meatloaf rest for 10 minutes before slicing to ensure it stays juicy.
