Chicken Bacon Ranch Tater Tot Casserole

Ingredients

  • The Base: 1 lb cooked chicken (shredded or cubed; rotisserie works great).
  • The Topping: 1 bag (32 oz) frozen tater tots and 6–8 slices of cooked, crumbled bacon.
  • The Sauce:
    • 1 can (10.5 oz) condensed cream of chicken soup.
    • 1 cup sour cream.
    • 1 packet (1 oz) dry Ranch seasoning mix.
    • 1/2 cup milk.
  • The Cheese: 2 cups shredded cheddar cheese (divided).
  • Garnish: Fresh parsley or sliced green onions.

Instructions

  1. Prep: Preheat your oven to 400°F and lightly grease a 9×13 inch baking dish.
  2. Mix: In a large bowl, whisk together the cream of chicken soup, sour cream, ranch seasoning, and milk until smooth.
  3. Combine: Fold in the cooked chicken, half of the crumbled bacon, and 1 cup of the cheddar cheese.
  4. Layer: Spread the chicken mixture evenly into the bottom of the prepared baking dish.
  5. Assemble: Arrange the frozen tater tots in a single layer over the top of the chicken mixture.
  6. Bake: Place in the oven and bake for 30–35 minutes until the tots are golden and crispy.
  7. Melt: Sprinkle the remaining 1 cup of cheese and the rest of the bacon over the tots. Bake for another 5 minutes until the cheese is bubbly and melted.
  8. Serve: Let it sit for 5 minutes before garnishing and serving.
