Fried Potatoes and Onions

Prep time: 10 mins | Cook time: 20–25 mins | Servings: 4

Ingredients

  • The Potatoes: 1.5 lbs yellow or Russet potatoes, peeled and sliced into thin rounds or cubes.
  • The Aromatics: 1 large yellow onion, thinly sliced.
  • The Fat: 3 tbsp butter or vegetable oil (for that perfect golden crust).
  • The Seasoning: * 1 tsp garlic powder.
    • Salt and black pepper to taste.
    • 1/2 tsp paprika (for extra color and smokiness).
  • Garnish: Fresh chopped parsley or chives.

Instructions

  1. Heat: In a large heavy skillet (cast iron is best for crispiness), melt the butter or heat the oil over medium-high heat.
  2. Sauté: Add the sliced potatoes to the pan in an even layer. Let them cook undisturbed for 5–7 minutes to develop a deep golden crust.
  3. Add Onions: Toss in the sliced onions and stir gently.
  4. Season: Sprinkle the garlic powder, paprika, salt, and pepper evenly over the mixture.
  5. Crisp: Continue cooking for another 10–15 minutes, turning occasionally, until the potatoes are tender on the inside and the onions are soft and caramelized.
  6. Finish: Garnish with fresh parsley or chives before serving hot right from the skillet.
