Prep time: 15 mins | Bake time: 20–25 mins | Servings: 9–12 bars
Ingredients
- The Brownie Base:
- 12 tbsp salted butter.
- ¾ cup granulated sugar.
- 2 large eggs.
- ¼ cup fresh lemon juice.
- 1 tbsp lemon zest.
- 1 cup all-purpose flour.
- The Lemon Glaze:
- ½ cup powdered sugar.
- 2 tbsp fresh lemon juice.
- 1–2 tsp lemon zest (for garnish).
Instructions
- Prep: Preheat your oven to 350°F. Grease an 8×8-inch baking pan or line it with parchment paper.
- Mix Wet Ingredients: In a large bowl, cream together the softened salted butter and granulated sugar until light and fluffy.
- Emulsify: Beat in the eggs one at a time, then stir in the ¼ cup of fresh lemon juice and 1 tbsp of lemon zest.
- Add Dry Ingredients: Gently fold in the all-purpose flour until just combined—be careful not to overmix to maintain that fudgy brownie texture.
- Bake: Pour the batter into the prepared pan and bake for 20–25 minutes, or until the edges are very lightly golden and a toothpick comes out clean.
- Glaze: While the brownies cool slightly, whisk together the powdered sugar and 2 tbsp of lemon juice until smooth.
- Finish: Pour the glaze over the warm brownies and sprinkle with the remaining lemon zest for garnish. Let them cool completely before slicing into squares.
