Instructions
- Whisk the Marinade: In a medium bowl, whisk together the soy sauce and olive oil until well combined.
- Marinate: Place the chicken legs in a large resealable bag or shallow dish. Pour the marinade over them, ensuring each leg is thoroughly coated. Add a few sprigs of fresh rosemary to the bag. Refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
- Prep for Baking: Preheat your oven to 400°F. Arrange the marinated chicken legs in a single layer in a baking dish or on a parchment-lined sheet pan.
- Season: Sprinkle the chicken generously with coarse black pepper, red chili flakes for a hint of heat, and additional fresh rosemary.
- Bake: Bake for 40–45 minutes, turning the legs halfway through, until the skin is crispy and golden brown and the internal temperature reaches 165°F.
