Ingredients

  • The Turkey:
    • 1 boneless turkey breast roast (about 3 to 4 lbs).
    • 5 tablespoons unsalted butter, softened.
  • The Aromatics:
    • Fresh rosemary, thyme, and sage sprigs.
    • Minced garlic.
  • The Gravy:
    • Pan drippings.
    • Chicken or turkey broth.

Instructions

  1. Prep: Preheat your oven to 325°F. Place the turkey breast on a rack in a shallow roasting pan.
  2. Herb Butter: In a small bowl, combine the softened butter with minced garlic and finely chopped rosemary, thyme, and sage.
  3. Season: Pat the turkey dry. Generously rub the garlic-herb butter all over the surface and under the skin of the turkey breast. Season with salt and pepper.

  6. Make Gravy: While the turkey rests, place the roasting pan on the stovetop. Whisk in broth and a little flour to the pan drippings, simmering until the gravy is thick and smooth.
