Prep time: 20 mins | Cook time: 1.5–2 hours | Servings: 6–8
Ingredients
- The Turkey:
- 1 boneless turkey breast roast (about 3 to 4 lbs).
- 5 tablespoons unsalted butter, softened.
- The Aromatics:
- Fresh rosemary, thyme, and sage sprigs.
- Minced garlic.
- The Gravy:
- Pan drippings.
- Chicken or turkey broth.
Instructions
- Prep: Preheat your oven to 325°F. Place the turkey breast on a rack in a shallow roasting pan.
- Herb Butter: In a small bowl, combine the softened butter with minced garlic and finely chopped rosemary, thyme, and sage.
- Season: Pat the turkey dry. Generously rub the garlic-herb butter all over the surface and under the skin of the turkey breast. Season with salt and pepper.
- Roast: Place additional herb sprigs in the pan. Roast the turkey for 1.5 to 2 hours, or until the internal temperature reaches 165°F.
- Rest: Transfer the turkey to a carving board and let it rest for at least 15 minutes to ensure the juices redistribute.
- Make Gravy: While the turkey rests, place the roasting pan on the stovetop. Whisk in broth and a little flour to the pan drippings, simmering until the gravy is thick and smooth.
- Serve: Slice the turkey breast into thick, juicy rounds and serve drizzled with the warm pan gravy.
