2 tablespoons fresh lemon juice (plus extra lemon slices for topping)
1 tsp dried dill or Italian seasoning
Salt and black pepper to taste

Assorted vegetables (such as cherry tomatoes and sliced onions for the pan)
Instructions
Preheat your oven to 200°C (400°F) and lightly grease a baking dish or sheet pan.
Arrange the base: Place the vegetables, such as cherry tomatoes and sliced onions, evenly across the bottom of the prepared baking dish.
Prep the salmon: Place the salmon fillets skin-side down over or among the vegetables in the pan.
Make the lemon garlic butter: In a small bowl, whisk together the olive oil, melted butter, minced garlic, fresh lemon juice, dill or Italian seasoning, salt, and black pepper.
Coat the salmon: Brush the lemon garlic mixture generously over each salmon fillet and top each one with a fresh lemon slice.
Bake: Bake for 12 to 15 minutes, or until the salmon is cooked through and easily flakes with a fork, and the vegetables are tender.
Serve: Garnish with fresh chopped parsley and serve warm.
