Ingredients
- The Potatoes:
- 2–4 large Russet potatoes.
- 1 tbsp olive oil.
- Coarse salt.
- The Steak Bites:
- 1 lb sirloin or ribeye, cut into 1-inch cubes.
- 2 tbsp unsalted butter.
- 1 tbsp Cajun seasoning.
- 3 cloves garlic, minced.
- The Creamy Parmesan Sauce:
- 1 cup heavy cream.
- 1/2 cup freshly grated Parmesan cheese.
- 1/2 tsp garlic powder.
- Red pepper flakes (optional, for heat).
- Garnish:
- Freshly chopped parsley.
Instructions
- Bake the Potatoes: Preheat your oven to 400°F. Rub the potatoes with olive oil and salt. Pierce them with a fork and bake for 45–60 minutes until the skin is crispy and the center is soft.
- Sear the Steak: While the potatoes rest, toss the steak cubes in Cajun seasoning. Melt butter in a large skillet over high heat. Add the steak in a single layer and sear for 2–3 minutes per side until a crust forms. Add the minced garlic during the last minute of cooking, then remove the steak from the pan.
- Whisk the Sauce: In the same skillet, pour in the heavy cream and bring to a simmer over medium heat. Whisk in the Parmesan cheese and seasonings until the sauce thickens and becomes smooth.
- Assemble: Slice the baked potatoes open and fluff the insides with a fork.
- Top it Off: Pile the garlic butter steak bites into each potato. Generously pour the warm Parmesan cream sauce over the top.
- Finish: Garnish with fresh parsley and extra red pepper flakes if desired.
