Mexican Taco Meatloaf

Ingredients

  • 1.5 lbs ground beef
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup breadcrumbs (or crushed tortilla chips)
  • 2 large eggs
  • 1/2 cup salsa (plus extra for serving)
  • 1 cup shredded cheddar or Mexican blend cheese
  • Chopped fresh cilantro for garnish

Instructions

  1. Preheat your oven to 175°C (350°F) and grease a loaf pan or line a baking sheet with foil.
  2. Combine the ingredients: In a large bowl, mix together the ground beef, taco seasoning, breadcrumbs, eggs, and 1/2 cup of salsa until just combined.
  3. Shape the loaf: Form the mixture into a loaf shape and place it into your prepared baking dish or pan.
  4. Bake: Bake for 45 to 50 minutes, or until the meatloaf is nearly cooked through.
  5. Add the cheese: Remove from the oven, sprinkle the shredded cheese evenly over the top, and return to the oven for 5 to 8 minutes, or until the cheese is melted and bubbling.
  6. Rest and serve: Let it rest for 10 minutes, slice, and garnish with fresh cilantro and an extra side of salsa.
