2 bell peppers (red, yellow, or green), sliced into strips
1 large onion, sliced
2 tbsp olive oil
2 tbsp lime juice
3 cloves garlic, minced
1 tbsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
Salt and black pepper to taste
Warm flour tortillas for serving
Instructions
Marinate the steak: In a bowl, combine the lime juice, 1 tablespoon of olive oil, minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Add the sliced steak and toss to coat. Let it marinate for at least 15 to 30 minutes.
Cook the vegetables: Heat the remaining 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat. Add the sliced bell peppers and onions, cooking for 5 to 7 minutes until tender and slightly charred. Remove them from the pan and set aside.
Cook the steak: In the same pan over high heat, add the marinated steak strips. Cook for 4 to 6 minutes, stirring occasionally, until browned and cooked to your liking.
Combine: Return the cooked peppers and onions to the pan with the steak, tossing everything together for 1 to 2 minutes until heated through.
Serve: Serve hot with warm flour tortillas and your favorite toppings.
