Ingredients
- The Onions: 2 lbs sweet onions (such as Vidalia or Walla Walla), thinly sliced.
- The Creamy Base:
- 1/2 cup unsalted butter.
- 1 cup sour cream or Greek yogurt.
- 1/2 cup mayonnaise.
- The Cheese: 2 cups shredded Swiss, Gruyère, or sharp Cheddar cheese.
- Seasonings:
- 1 tsp garlic powder.
- 1/2 tsp salt and 1/4 tsp black pepper.
- Fresh thyme or parsley for garnish.
- The Topping: 1 cup crushed Ritz crackers or breadcrumbs mixed with 2 tbsp melted butter.
Instructions
- Sauté: Melt the butter in a large skillet over medium heat. Add the sliced onions and cook for about 10–12 minutes until they are soft and translucent (do not brown them completely).
- Mix: In a large bowl, whisk together the sour cream, mayonnaise, seasonings, and 1.5 cups of the shredded cheese.
- Combine: Fold the sautéed onions into the creamy cheese mixture until evenly coated.
- Layer: Pour the mixture into a greased 2-quart baking dish. Top with the remaining 1/2 cup of cheese and the buttery cracker crumbles.
- Bake: Bake at 350°F for 30–35 minutes until the edges are bubbling and the top is a deep, golden brown.
- Garnish: Sprinkle with fresh thyme sprigs or chopped parsley before serving warm.
