Lunch Lady Brownies

Prep time: 15 mins | Cook time: 25–30 mins | Servings: 12–15 squares

Ingredients

  • The Brownie Base:
    • 1 cup unsalted butter, melted.
    • 1/2 cup unsweetened cocoa powder.
    • 2 cups granulated sugar.
    • 4 large eggs.
    • 1.5 cups all-purpose flour.
    • 1 tsp vanilla extract and a pinch of salt.
  • The Iconic Frosting:
    • 1/4 cup unsalted butter, softened.
    • 1/4 cup whole milk.
    • 1/4 cup cocoa powder.
    • 3 cups powdered sugar.

Instructions

  1. Mix Base: In a large bowl, whisk together the melted butter and cocoa powder until smooth. Stir in the sugar, then add the eggs and vanilla, beating well.
  2. Combine: Gently fold in the flour and salt until just combined—do not overmix, or you’ll lose that signature fudgy texture.
  3. Bake: Pour the batter into a greased 9×13 inch baking pan. Bake at 350°F for 25–30 minutes. The edges should be set, but the center should still be slightly soft.
  4. Prepare Frosting: While the brownies are baking, whisk the softened butter, milk, cocoa, and powdered sugar together until completely smooth and pourable.
  5. Glaze: This is the secret—pour the frosting over the brownies while they are still warm from the oven. This allows the bottom layer of frosting to slightly soak in while the top sets into a glossy, fudge-like shell.
  6. Set: Let the brownies cool completely in the pan for at least an hour before slicing into squares.
