Southern Sweet Onion Casserole

Ingredients

  • The Onions: 2 lbs sweet onions (such as Vidalia or Walla Walla), thinly sliced.
  • The Creamy Base:
    • 1/2 cup unsalted butter.
    • 1 cup sour cream or Greek yogurt.
    • 1/2 cup mayonnaise.
  • The Cheese: 2 cups shredded Swiss, Gruyère, or sharp Cheddar cheese.
  • Seasonings:
    • 1 tsp garlic powder.
    • 1/2 tsp salt and 1/4 tsp black pepper.
    • Fresh thyme or parsley for garnish.
  • The Topping: 1 cup crushed Ritz crackers or breadcrumbs mixed with 2 tbsp melted butter.

Instructions

  1. Sauté: Melt the butter in a large skillet over medium heat. Add the sliced onions and cook for about 10–12 minutes until they are soft and translucent (do not brown them completely).
  2. Mix: In a large bowl, whisk together the sour cream, mayonnaise, seasonings, and 1.5 cups of the shredded cheese.
  3. Combine: Fold the sautéed onions into the creamy cheese mixture until evenly coated.
  4. Layer: Pour the mixture into a greased 2-quart baking dish. Top with the remaining 1/2 cup of cheese and the buttery cracker crumbles.
  5. Bake: Bake at 350°F for 30–35 minutes until the edges are bubbling and the top is a deep, golden brown.
  6. Garnish: Sprinkle with fresh thyme sprigs or chopped parsley before serving warm.
