Ingredients

    • 4–5 large russet or gold potatoes, cubed.

    • 1 tsp smoked paprika.
    • Salt and black pepper to taste.
  • The Toppings:
    • 1/2 cup BBQ sauce.
    • 1.5 cups shredded Cheddar cheese.
    • 1/2 cup cooked bacon, crumbled.
  • Garnish: Freshly chopped chives or green onions.

Instructions

  1. Prep: Preheat your oven to 400°F. Grease a large 9×13-inch baking dish.
  2. Season: In a large bowl, toss the cubed potatoes with olive oil, garlic powder, paprika, salt, and pepper until well-coated.
  3. Roast Potatoes: Spread the potatoes in the baking dish and bake for 20–25 minutes until they begin to soften and turn golden on the edges.
  4. Add Chicken: Season the chicken cubes with a little salt and pepper, then nestle them into the dish with the partially cooked potatoes.
  5. Glaze: Drizzle the BBQ sauce evenly over the chicken and potatoes, stirring gently to combine.
  6. Bake: Return to the oven for another 15–20 minutes until the chicken is fully cooked through.
  7. Melt: Top the dish with shredded Cheddar cheese and the crumbled bacon. Bake for 5 more minutes until the cheese is bubbling and molten.
