- 1/2 cup BBQ sauce.
- 1.5 cups shredded Cheddar cheese.
- 1/2 cup cooked bacon, crumbled.

Instructions
- Prep: Preheat your oven to 400°F. Grease a large 9×13-inch baking dish.
- Season: In a large bowl, toss the cubed potatoes with olive oil, garlic powder, paprika, salt, and pepper until well-coated.
- Roast Potatoes: Spread the potatoes in the baking dish and bake for 20–25 minutes until they begin to soften and turn golden on the edges.
- Add Chicken: Season the chicken cubes with a little salt and pepper, then nestle them into the dish with the partially cooked potatoes.
- Glaze: Drizzle the BBQ sauce evenly over the chicken and potatoes, stirring gently to combine.
- Bake: Return to the oven for another 15–20 minutes until the chicken is fully cooked through.
- Melt: Top the dish with shredded Cheddar cheese and the crumbled bacon. Bake for 5 more minutes until the cheese is bubbling and molten.
- Finish: Garnish with fresh chives before serving hot.
