Ingredients
- The Bread: 8–10 slices of white sandwich bread, crusts removed.
- The Filling:
- 4 oz cream cheese, softened.
- 2 tbsp powdered sugar.
- ½ cup finely diced strawberries.
- The Egg Wash:
- 2 large eggs.
- 3 tbsp milk.
- 1 tsp vanilla extract.
- The Coating:
- ½ cup granulated sugar.
- 1 tbsp ground cinnamon.
- 2 tbsp butter (for the pan).
Instructions
- Prep the Bread: Use a rolling pin to flatten each slice of crustless bread until thin.
- Mix Filling: In a small bowl, whisk together softened cream cheese and powdered sugar until smooth. Fold in the diced strawberries.
- Roll: Spread about 1–2 teaspoons of the cream cheese mixture along one edge of the bread. Roll the bread up tightly.
- Egg Dip: In a shallow dish, whisk together eggs, milk, and vanilla. In a separate dish, combine the granulated sugar and cinnamon.
- Cook: Melt butter in a skillet over medium heat. Dip each roll-up into the egg mixture (covering all sides) and place in the skillet.
- Golden Brown: Sauté for 1–2 minutes per side until the bread is golden and slightly crisp.
- Sugar Toss: Immediately remove the hot roll-ups from the pan and toss them in the cinnamon-sugar mixture until fully coated.
- Serve: Enjoy immediately while the filling is warm and creamy.
