Cinnamon Sugar French Toast Roll-Ups

Ingredients

  • The Bread: 8–10 slices of white sandwich bread, crusts removed.
  • The Filling:
    • 4 oz cream cheese, softened.
    • 2 tbsp powdered sugar.
    • ½ cup finely diced strawberries.
  • The Egg Wash:
    • 2 large eggs.
    • 3 tbsp milk.
    • 1 tsp vanilla extract.
  • The Coating:
    • ½ cup granulated sugar.
    • 1 tbsp ground cinnamon.
    • 2 tbsp butter (for the pan).

Instructions

  1. Prep the Bread: Use a rolling pin to flatten each slice of crustless bread until thin.
  2. Mix Filling: In a small bowl, whisk together softened cream cheese and powdered sugar until smooth. Fold in the diced strawberries.
  3. Roll: Spread about 1–2 teaspoons of the cream cheese mixture along one edge of the bread. Roll the bread up tightly.
  4. Egg Dip: In a shallow dish, whisk together eggs, milk, and vanilla. In a separate dish, combine the granulated sugar and cinnamon.
  5. Cook: Melt butter in a skillet over medium heat. Dip each roll-up into the egg mixture (covering all sides) and place in the skillet.
  6. Golden Brown: Sauté for 1–2 minutes per side until the bread is golden and slightly crisp.
  7. Sugar Toss: Immediately remove the hot roll-ups from the pan and toss them in the cinnamon-sugar mixture until fully coated.
  8. Serve: Enjoy immediately while the filling is warm and creamy.
