Ingredients
- The Citrus Base:
- 3 medium oranges (zested and juiced to make about ¾ cup juice).
- The Syrup:
- 1 cup granulated sugar.
- ½ cup corn syrup.
- The Setting Agents:
- 1 tbsp gelatin.
- ¼ cup water.
- 1 tbsp butter.
- The Finish:
- 1 cup confectioners’ sugar (for dusting).
Instructions
- Extract Flavor: Zest and juice the oranges to collect approximately ¾ cup of juice.
- Boil the Base: In a saucepan, combine the fresh orange juice, water, granulated sugar, and corn syrup. Bring to a simmer and cook for 5 minutes.
- Bloom Gelatin: Bloom the gelatin in ¼ cup of cold water, then add it to the hot orange syrup mixture.
- Thicken: Stir in the orange zest and butter. Continue to cook the mixture for 5–10 minutes until it thickens significantly.
- Set: Pour the thickened mixture into a dish and chill in the refrigerator for 4–6 hours or overnight until completely firm.
- Shape and Dust: Cut the set candy into individual pieces and dust them thoroughly with confectioners’ sugar.
