Ingredients
- The Protein: 1 lb Italian sausages (sweet or hot), sliced into rounds.
- The Veggies: * 2 large bell peppers (red and green), thinly sliced.
- 1 large yellow onion, thinly sliced.

Instructions
- Sear the Sausage: Heat the oil or butter in a large skillet over medium-high heat. Add the sausage slices and cook until browned and crispy on the edges, then remove from the pan.
- Sauté Veggies: In the same skillet, add the sliced peppers and onions. Sauté for 8–10 minutes until the onions are soft and the peppers are tender-crisp.
- Combine: Stir in the garlic, oregano, and red pepper flakes, cooking for another minute until fragrant.
- Finish: Add the browned sausages back into the pan. Toss everything together to combine the flavors and heat through.
- Serve: Season with salt and pepper, then garnish with fresh chives or parsley.
