- The Crust & Crumble:
- 3 cups all-purpose flour.
- 1 ½ cups sugar.
- ¼ tsp salt.
- Zest of 1 lemon.
- ½ cup butter, chilled and cubed.
- 3 eggs.
- The Strawberry Filling:
- 4 cups fresh strawberries, sliced.
- 1 tbsp lemon juice.
- 1 tbsp cornstarch.
- ¾ cup sugar.
Instructions
- Prep: Preheat your oven to 375°F (190°C). Grease a 9×13-inch glass baking dish.
- Make the Dough: In a large bowl, whisk together the flour, 1 ½ cups sugar, salt, and lemon zest. Use a pastry cutter or fork to blend in the butter and eggs until the mixture becomes crumbly.
- Press the Base: Press slightly more than half of the dough mixture firmly into the bottom of the prepared baking dish to create an even crust.
- Prepare Fruit: In another bowl, gently toss the sliced strawberries with lemon juice, cornstarch, and ¾ cup sugar until the berries are well coated.
- Layer: Spread the strawberry mixture evenly over the unbaked bottom crust.
- Top: Crumble the remaining dough mixture evenly over the top of the strawberries.
- Bake: Place in the oven and bake for 45 minutes, or until the crumble top is light golden brown and the strawberry filling is bubbling.
- Cool: Allow the bars to cool completely in the pan before slicing into squares. This ensures the fruit layer sets properly.
