Prep time: 10 mins | Cook time: 20 mins | Servings: 4

Ingredients

  • The Protein: 1 lb ground beef or turkey.
  • The Veggies:
    • 2 large bell peppers (any color), chopped into bite-sized pieces.
    • 1 medium onion, diced.
  • The Base:
    • 2 cups cooked white rice.
    • 1 can (15 oz) tomato sauce or diced tomatoes.
  • The Seasoning:
    • 1 tsp garlic powder.
    • 1 tsp Italian seasoning.
    • Salt and black pepper to taste.
  • The Finish:
    • 1 cup shredded cheddar or mozzarella cheese.
    • Freshly chopped parsley or chives for garnish.

Instructions

  1. Brown the Meat: In a large skillet over medium-high heat, cook the ground beef and onion until the meat is no longer pink. Drain any excess fat.
  2. Sauté Peppers: Add the chopped bell peppers to the skillet and cook for 5 minutes until they begin to soften.
  3. Simmer Sauce: Stir in the tomato sauce, garlic powder, Italian seasoning, salt, and pepper. Let the mixture simmer for about 5 minutes to meld the flavors.
  4. Add Rice: Fold in the cooked rice and stir until everything is well combined and heated through.
  5. Melt Cheese: Sprinkle the shredded cheese evenly over the top. Cover the skillet with a lid for 1–2 minutes until the cheese is melted and bubbling.
  6. Garnish: Top with fresh herbs and serve directly from the pan.
